Monkey in the Middle Pancakes

Don’t monkey around with breakfast — serve your children these adorable primate pancakes that they’re sure to love. Fire up the griddle and pour one large pancake with three additional smaller hotcakes. Create the face of the monkey with the smaller pancakes and top with marshmallows and chocolate to craft the eyes and whiskers. When you serve a short stack of primate pancakes with an 8-ounce glass of Oakhurst fat free skim milk, you give your kids the milk they love, with protein they need.

Ingredients

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon white granulated sugar
1/4 teaspoon salt
1 large egg
1 cup Oakhurst fat free skim milk
1/4 teaspoon vanilla extract
8 mini marshmallows
Optional – 4 tablespoon chocolate syrup
Pair each serving with: 8-ounce glass of Oakhurst fat free skim milk

Preparation

Whisk together flour, baking powder, sugar, and salt. Mix egg, milk, and vanilla. Add wet ingredients to dry ingredients and whisk gently just until combined (it should still be a little lumpy, that’s okay).

Preheat a griddle or skillet to medium heat and grease lightly with cooking spray. Pour batter onto pan to make pancakes being sure to pour one large pancake, and three that are about 1/3 of the size of the first. Once pancakes start to bubble in the center and edges begin to look dry, flip and allow to cook for another 30-40 seconds until lightly browned.

Make the monkey by arranging the larger pancake in the center of the plate. Place two of the smaller ones on either side of the first pancake, tucking each slightly underneath the larger pancake to make the monkey “ears”.

Place the last pancake on top of the Large pancake, but down towards the bottom slightly hanging over the edge to create the snout of the monkey.

Cut marshmallow in half crosswise and arrange about an inch apart above the mouth to make the eyes. Use chocolate syrup to to make one dot on each of the marshmallows for the pupils, and then to make two dots at the top of the snout to make the nose. Drizzle chocolate in a semi-circle at the bottom of the snout to make the mouth.

Serve with an 8-ounce glass of Oakhurst fat free skim milk.
